जे सतत झिजत असते त्यास शरीर असे म्हणतात- - - - - - अशी व्याख्या आयुर्वेदाने शरीराची केलेली आहे - - - - - आणि हे सत्यच आहे
कारण आपल्या शरीरात पेशींची सतत झिज चालू असते - - - - - - आहारामुळे नवीन पेशी निर्माण होतात आणि - - - - शरीर व्यापार सुरळीत होत असतो - - - - - - -
शरीरात जे पेशींचे अंत आणि उत्पत्ती होण्याची चक्र असते ते सातत्याने मृत्यूपर्यंत चालू असते आणि या चक्राला सुरळीतता असावी - - - - - या उद्देशाने ऋतुमानानुसार आपला आहार विहार कसा असावा - - - - - याचे विवेचन आयुर्वेदामध्ये उत्तमरीत्या केलेले आढळते आणि याचे - - - आचरण केल्यास स्वास्थ्यपूर्ण शंभरी गाठणे सहज शक्य आहे.
साधारणतः 15 डिसेंबर ते 15 फेब्रुवारी या कालखंडात शिशिर ऋतू असतो आणि हा स्वास्थ्य प्रदान करण्यात श्रेष्ठ असतो - - - यात थंडीचे प्रमाण वाढलेले असते - - - - थंडीमुळे कफदोष शरीरात वाढायला सुरुवात होते
थंडीमध्ये ताकद देणारा आहार घेणे आवश्यक असते - - - - ताकद देणारे अनेक पदार्थ थंड गुणाचे असतात आणि ते कफ दोष वाढवू शकतात आणि विकार उत्पन्न होऊ शकतात - - -
शिशिर ऋतूत सर्वच उष्ण पदार्थ हे उपयुक्त ठरतात उदाहरणार्थ - - - - - गुळाची पोळी गुळ हा चवीला गोड असला तरी - - - उष्ण आहे - - - - गुळाची पोळी सोबत साजूक तूप घेण्याची विसरू नये
वांग्याचे भरीत देखील या ऋतूत उत्तम आहार आहे - - - वांगे हे कफ दूर करणारे आणि उष्ण असतात
या ऋतूत गहू आणि तांदुळापेक्षा - - - - बाजरी खाणे उत्तम असते कारण बाजरी ही उष्ण गुणधर्माची असते - - - - - या ऋतूत बाजरीच्या कणकेत तीळ मिसळण्याचा प्रघात आहे - - - - - - - - - याच कालखंडात मकर संक्रांत येते आणि - - - - त्यात तिळगुळ देण्याची प्रथा आहे
आपल्या शरीर आणि ऋतू संबंधांना अनुसरून आहार विहार ची रचना सर्व भारतीय सणांमध्ये केलेली आढळते - - - - - या मकर संक्रांतीच्या काळात तीळ आणि गुळाच्या संदर्भातील शास्त्रोक्त वर्णन बघू या
तीळ पौष्टिक पदार्थांमध्ये गणली जाते - - - - - - सर्व प्रकारच्या तिळांमध्ये काळे तीळ श्रेष्ठ समजले जातात - - - - परंतु आपण उपलब्धतेच्या नुसार पांढरी तीळ वापरतो
पांढरी तीळ चवीस - - - - कडू - - - अल्प तिखट - - - तुरट आणि गोड असते
पचण्यास थोडी जड - - - स्निग्ध आणि उष्ण गुणाची तीळ बुद्धि वाढविणारी - - - केसांना चमक आणणारी असते - - - दोषांचा विचार केल्यास वातदोष कमी करणारी आणि अगदी अल्प प्रमाणात पित्त वाढविणारी असते
तीळ सेवन केल्याने लघवीचे प्रमाण थोडे वाढते - - - - तीळीमध्ये चुन्याचे प्रमाण अधिक असल्यामुळे वाढत्या वयातील मुलांमध्ये दररोज तीळीची चिक्की किंवा तीळ पापडी दिल्यास हाडांना बळकटी येते
पांढरे तीळ साखरेच्या पाकात घालून त्याच्या रेवड्या बनवल्या जातात - - - - ह्या रेवड्या देखील उत्तम पोषक असतात
मकर संक्रांतीला तीळ आणि गुळाला एकत्र करून बनविण्यात येणारे मिश्रण अथवा तिळाची गुळातील चिक्की हा पदार्थ ऋतूनुसार शरीराचे स्वास्थ्यवर्धन करण्यास उत्तम समजला जातो
यामध्ये वापरण्यात येणाऱ्या गुळ शक्यतो - - - - - एक वर्ष जुना घ्यावा.गुळ पाचण्यास हलका असून - - - - रक्त वाढविणारा - - - - मुळव्याध - - - टी. बी. - - खोकला - - - - चव न समजणे इत्यादी विकारांमध्ये पथ्यकारक असतो
कष्टाचे काम करणाऱ्या लोकांसाठी गूळ हा - - - थकवा कमी करण्यासाठी मुख्य भूमिका बजावतो
गुळपोळी किंवा पोळी भाकर चुरमा आणि गूळ एकत्र करून साजूक तुपा सोबत सेवन केल्यास चांगली ताकद प्राप्त होते आणि गूळ गरम पडत नाही
तिळातील स्निग्धता मिळाल्याने शरीरात - - - - त्वचेवर थंडीमुळे आलेली रुक्षता - - - -कोरडेपणा कमी होतो.
तिळगुळ मकर संक्रांतीच्या काळात शरीरासाठी नक्कीच स्वास्थ्यवर्धक असते परंतु काही लोकांना ते वर्ज्य देखील असते
ज्या व्यक्तींना तिळाची एलर्जी आहे अशांनी याचं सेवन करू नये
तिळगुळ हे वसंत ग्रीष्म आणि शरद ऋतूमध्ये सर्वांनीच वर्ज्य करावे
कृमी - - - त्वचेचे विकार - - - सर्दी - - - - रक्ताचे विकार - - - - लघवी अधिक होणे मलाचा अवरोध असणे इत्यादी विकार असणाऱ्यांनी तिळगुळाचे सेवन करू नये
उष्णतेचे विकार आणि पित्त प्रकृती असणाऱ्यांनी मकर संक्रांतीच्या काळात अल्प प्रमाणातच तिळगुळ सेवन करावे अथवा सेवन करूच नये
अशा प्रकारे ऋतूनुसार प्रकृतीनुसार तिळाचे सेवन आरोग्यवर्धक ठरू शकते

Hello, I am Dr. Satish Vasant Shindadkar. Today we are going to learn about sesame and jaggery (tilgul).
Ayurveda defines the body as "that which is constantly wearing away." This definition is indeed true because the cells in our body are continuously undergoing wear and tear. New cells are formed through proper nutrition, and thus the body's functions continue smoothly.
The cycle of cell death and regeneration continues throughout life until death. To ensure that this cycle remains balanced, Ayurveda has explained in detail how our diet and lifestyle should be adjusted according to the seasons. By following these principles, it is quite possible to maintain good health well into old age.
Generally, the period from December 15 to February 15 is considered the Shishir (late winter) season, which is regarded as excellent for promoting health. During this time, the cold intensifies, and as a result, the Kapha dosha begins to increase in the body.
During winter, it is important to consume foods that provide strength. Many strength-giving foods have cooling properties, which can increase Kapha and lead to health issues.
In the Shishir season, all warming foods are beneficial. For example, jaggery flatbread (gul poli). Although jaggery tastes sweet, it has a warming nature. One should not forget to eat homemade ghee along with jaggery flatbread.
Roasted mashed eggplant (vangyache bharit) is also an excellent food during this season. Eggplant helps reduce Kapha and has warming properties.
During this season, millet (bajra) is better than wheat and rice because it has warming qualities. It is customary to mix sesame seeds into millet flour during this period.
The festival of Makar Sankranti also falls during this time, and it is customary to distribute sesame and jaggery sweets (tilgul).
Many Indian festivals are designed around the relationship between the human body and seasonal changes, especially with respect to diet and lifestyle. Let us now look at the traditional Ayurvedic description of sesame and jaggery during Makar Sankranti.
Sesame seeds are considered highly nutritious. Among all varieties, black sesame is regarded as the best, but depending on availability, we generally use white sesame.
White sesame tastes slightly bitter, mildly pungent, astringent, and sweet.
It is somewhat heavy to digest, oily, and warming in nature. Sesame is believed to improve intellect and enhance the shine of the hair. From the perspective of the doshas, it reduces Vata and increases Pitta only slightly.
Eating sesame slightly increases urination. Since sesame contains a high amount of calcium, giving sesame brittle or sesame candy daily to growing children helps strengthen their bones.
White sesame is also coated with sugar syrup to make sesame candies (revdi), which are also highly nutritious.
The mixture of sesame and jaggery, or sesame brittle prepared during Makar Sankranti, is considered an excellent seasonal food for promoting health.
The jaggery used in it should preferably be at least one year old.
Jaggery is easy to digest, helps increase blood, and is considered beneficial for conditions such as hemorrhoids, tuberculosis, cough, and loss of taste.
For people who perform strenuous physical work, jaggery plays an important role in reducing fatigue.
Eating jaggery flatbread or a mixture of crumbled flatbread, jaggery, and homemade ghee provides good strength without causing excessive body heat from the jaggery.
The natural oils in sesame help reduce the dryness and roughness of the skin caused by winter.
Tilgul is certainly beneficial for health during Makar Sankranti, but for some people, it should be avoided.
People who are allergic to sesame should not consume it.
Tilgul should generally be avoided by everyone during the spring, summer, and autumn seasons.
People suffering from intestinal worms, skin disorders, colds, blood disorders, excessive urination, or constipation should avoid eating tilgul.
Those with heat-related disorders or a Pitta-dominant constitution should consume tilgul only in small quantities during Makar Sankranti, or avoid it altogether.
Thus, when consumed according to the season and one's body constitution, sesame can be beneficial for health.
