शहाळ्यातील पाण्याच्या गुणधर्मामुळे त्याला सलाइन चा पर्याय म्हणून देखील मानले जाते. शहाळे जेव्हा आपण कोणाकडून विकत घेतो तेव्हा त्यांना गोड पाणी असणारे मागत असतो. बाजारात उपलब्ध असणार्या शहाळ्यांमध्ये गोड पाणी असणारे आणि थोडे तुरट गोड पाणी असणारे मिळतात म्हणजे ज्या मध्ये थोडे ओले खोबरे म्हणजे मलई असते त्यात गोड पाणी मिळते तर ज्यात मलई नसते त्यात थोडे तुरट पाणी मिळते.
